Melt in Your Mouth Pumpkin Bread

2 cups flour
2 cups sugar
1 (3.4 oz) pkg instant vanilla pudding mix
1 tsp baking soda
1 tsp salt

1 tsp cinnamon
1 1/4 cup oil (you could use applesauce)
5 eggs
2 cups (one can) canned pumpkin puree
(I added mini chocolate chips to the top of mine)

Preheat oven 325 degrees Lightly grease 2 9x5 inch loaf pans.
In a large mixing bowl combine flour, sugar, pudding mix, baking soda, salt, and cinnamon.
Stir in oil, eggs and pumpkin until well blended. Pour into prepared pans.
Bake for 1 hour, or until a toothpick comes out clean, you may need to add an additional 15 minutes or so. Remove from oven let stand 15 minutes, then remove from pans and cool on a wire rack.
