Banana Muffins

Yum Yum Banana Crumb

Em posted this recipe back in 2008, and I have made them ever since, and here is a random fact about me... I HATE bananas, can't stand them, it's a texture thing, but I LOVE these muffins!
Ingredients
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 or 3 mashed bananas ( you know the rotten brown spotted ones )
  • 3/4 cup sugar
  • 1 egg, lightly beaten
  • 1/3 cup melted butter

Crumb Topping

  • 1/3 cup packed brown sugar
  • 2 TBSP flour
  • 1/8 tsp cinnamon
  • 1 TBSP butter

In a large bowl mash your bananas add sugar, egg, and melted butter. Stir in baking soda, baking powder, salt, and flour. Stir until just moistened. Spoon into lined muffin pan.

In a small bowl mix together softened butter, flour, cinnamon, and brown sugar, the mixture will resemble corn meal. Sprinkle over the top of the muffins.

Place in oven 375 degrees for 12 minutes...

Ut oh another recipe I am going to HAVE to try!!! I don't know if ANYTHING is going to top your Pumpkin Bread but I MUST see!!!...lol.♥

I have already made that Pumpkin Bread 3 times since you posted your recipe on it! I do have a loaf frozen "in case of emergency"!

Again you make me chuckle. I'm sitting here resting and waiting the half hour till two dinners are ready to come out of the oven - one for my family, and one for a family from church (the wife broke her collar bone, to the point of needing surgery). After getting it all prepped and in the oven, I went to the downstairs fridge (which come to think of it, this same family gave us when they remolded their kitchen and bought new of everything) and pulled out loafs of both banana and pumpkin bread to send along with the spinach salad fixins and homemade chicken pot pie. I planned on serving some of both with our dinner too! ;-p

For the record, the pumpkin bread was not made from your recipe, sorry. I already had and ab-so-lute-ly l-o-v-e my grandma's recipe, way before you posted yours, and once I find a recipe that I like that much for something, I stick with it, don't even try others. Nothing personnal! :-D

I too have this thing about "texture's" in food! I also like things chopped small so all of the textures and flavors combine/blend in a recipe. Some people that do not normally like celery in potato salad, tell me they really like mine and it has celery in it. The difference is that you get small bits of celery, WITH potatoes, WITH hard cooked chopped eggs, WITH ... all in one bite. Makes such a difference!!!

I should send you my recipe for banana bars, with cream cheese frosting. Yum!! Remind me if I forget ;->

Jen, I just tried typing in your blog address on my own (instead of clicking on the link to you on my Yahoo page) and came across another Lipstick and Laundry blog site - who's owner is also named Jen. Wow!!! You probably already know about that. Heck, at some point in time I myself might have even told you about it previously (o;-p).
