Chicken Enchiladas. AKA jEnchiladas.

I soooo wish this was scratch n sniff... They smell AMAZING!

Chicken jEnchiladas

with Cream Cheese

1/2 of an onion, chopped

2 Tbsp oil

1 tsp EACH. chili powder, garlic powder, ground cumin

8 oz cream cheese

3 large chicken breasts cooked, shredded

3/4 cup salsa

8 oz shredded colby/jack cheese

1/4 cup chopped black olives

1 can (28 oz) enchilada sauce (I use green)

corn tortillas

Heat oven to 350.

Have 2 (11 x 7) baking dishes ready with a thin layer of enchilada sauce in the bottom. In a large skillet heat oil and cook onions about 5 minutes. Stir in chili powder, garlic powder, and cumin. Add cream cheese and cook until melted. Add chicken and salsa. Stir over medium heat until hot, remove from heat and stir in cheese and olives. Heat/soften corn tortillas, spoon in filling roll and place seam side down in the prepared baking dishes. Top with remaining enchilada sauce.Bake 20 to 30 minutes.

Jen, as you know, I get your postings sent to me via email (which I am glad you allow us that option!).
I found it very interesting that both you and The Pioneer Women posted recipes for Enchilada's today! I do believe it's a sign. I have only made them a couple of times..... I now believe it is time to try them yet again o;-p

Reading over the two different recipes, I think I shall combine them to some extent, and see what I come up with. I need to go add some ingredients to this weeks grocery list ...

We have falling snow and below freezing wind chills here - how are you currently faring?

Yummy! I make something almost like this but I put white sauce on top. Love me some Mexican food!

Yum! Sounds really good. I can't wait to try this out. I have a gluten allergy and get so, so excited when I find a yummy recipe I can make.
